water from washing the vats in which milk is coagulated
liquid from draining the curd, the quantitative and qualitative properties of which vary according to the type of cheese produced
washing the tanks of transport vehicles
used brine from the salting rooms
water used for washing milk-processing spaces
water from washing the equipment employed

It follows that the pollutants contained in dairy wastewater are the residues of milk and its by-products.

The residues from products used to clean rooms and equipment, such as alkaline or acid solutions or detergents with surfactants, can also be added to this. Although free of particular toxic agents, this water must be treated before it can be discharged into sewers or surface waters.
